Pumpkin Seed Pesto Rice Casserole

I haven’t had pesto in a while, which is very unlike me because it is one of my absolute favorites,  so I jumped on the opportunity to make this dish! Easy to make, filling, and healthy. Sign me up!

Casserole Ingredients:

-1 teaspoon oil

-2 – 3 large shallots, chopped

-8 oz mushrooms, sliced                *or you can substitute broccoli, cauliflower, or green beans for

-1 zucchini, chopped                                                                                                  any of the vegetables

-1 summer squash, chopped

-2 – 3 Tablespoons liquid aminos

-1 teaspoon thyme

-1/2 teaspoon oregano

-1 15 oz can beans, rinsed and drained
