Dijon Crusted Lamb



2 racks of lamb
1 oz dijon mustard
1 cup panko
1/4 bunch parsley
1 tbsp Italian seasoning
TT Salt and Pepper

First bring your racks to room temperature if you already haven’t.l and preheat your oven to 375°F. Season your lamb with salt and pepper, do not be shy with your seasoning. Now take a pan (I prefer cast iron) add about a tbsp of oil to it, let it get hot and brown your racks on all sides.
While that is going you can mix the dijon mustard with the Italian seasoning. And blend the parsley with panko; I prefer you use a robocoupe if you do not have one you can use a blender but you will have to add oil to get it to blend.
