Vegan Macaroni & Cheese Recipe:

Hello 🙂 Macaroni and cheese is my favorite food!!!! I modified the recipe to include more protein, fiber, Vitamin B12, Vitamin A and calcium. Yayyyy

Nutrition Information: 4 servings= 344 kcal/serving

  1. Steam me baby
    • 1 cup steamed cauliflower (hello fiber)
  2. Boil me up
    • 8 oz pasta (I used Banza chick pea shell pasta) holy protein!!!
  3. Throw me in the Vitamix
    • 1/2 can pumpkin (yayy Vitamin A & potassium)
    • 1.5 cup almond milk (no hormones in this plant based milk wahooo)
    • 8 tbsp. nutritional yeast (B12 deficient? this will help increase your levels)
    • 1/4 tsp Dijon mustard (here comes the flavor)
    • 1/2 tsp garlic powder (it keeps coming)
    • salt & pepper to taste
    • 2 tbps Earth Balance vegan butter
  4. Top me off
    • pinch red hot pepper flakes
    • handful panko bread crumbs
