Sweet and Sour Pork
Interestingly, you can also prepare this dish with fish or chicken or even shrimps or prawns
Ingredients:- For the batter marinade
600 gms of belly pork
½ cup plain flour
½ cup corn flour
½ teaspoon of salt
2 tablespoons of cooking oil
4 tablespoons of water
1 egg
Ingredients:- For the sauce
½ a cucumber cut into cubes
1 red tomato cut into small pieces
2 shallots cut into small pieces
1 red pepper, cut into small pieces
2 slices of pineapple cut into small pieces
2 big tablespoons of tomato sauce
2 big tablespoons of chili sauce (you can use any types, with garlic, Thai style, etc)
1 tablespoon of sugar
½ teaspoon of salt
1 teaspoon of corn flour
1/3 cup of water

Mediterranean Pita Dip
The best way to guarantee at least one healthy option at this weekend’s holiday picnic is to bring one. I typically make my layered taco dip for the 4th of July celebrations every year. It’s loaded with sour cream, cream cheese, cheese & other toppings and it is delicious. This year though I’m focused on more healthy options and made this Mediterranean layered dip instead. Similar concept, but such a better alternative and there is so much flavor!
You will need:
1 1/2 cups hummus
1/2 cup chopped seeded cucumber
1/2 cup chopped red tomato
1/3 cup feta cheese
1/4 cup chopped red onion
1/4 cup black sliced olives
1/4 cup sliced artichoke hearts
To make:
1. Spread hummus evenly across a platter (I used a standard dinner plate size platter).
2. Top hummus evenly with chopped cucumber, red onion, tomato, olives, artichokes & feta cheese.

Sweet and Sour Spare Ribs
Another great way to make a sweet and sour dish is with some spare ribs. But this time I tried it with a slight twist and it tastes great. I prepared this dish with some pickled cucumber slices I had prepared earlier to give the dish a tangy taste. Here’s what I did.
Cut up half a cucumber into thin slices. Put them in a shallow dish. Pour some white rice wine vinegar over the cucumber, enough to cover all the slices. Add 2 tablespoons of sugar. Stir it up to ensure evenness. You may also add some fresh red chili to the pickle for extra bite. Leave for at least a couple of hours in the fridge.

Grandma
My grandmother is afflicted with rumatory arthritis. She was once so active and vibrant, she now is immobile and in constant pain. Every year she gets the common cold usually around November lasting around two or three months before she can kick it. This is her usual cross to bear each winter. A big reason she goes to South Texas every winter to escape the cold. This year things went horribly wrong. Her chest cold would not go away. She went to a doctor in Texas who prescribed an antibiotic twice. Instead of relief she became worse. Suffering intensely she came home from Texas early and went to her regular Dr. who again prescribed two rounds of another antibiotic. Once again she began to get worse. She detreated and ended up needing to go to the hospital. They admitted her, and was able to get her somewhat stable and sent…

Reflections on a Magical Wales Team in Euro 2016
First, let me begin this article by saying that I am not from Wales; unlike my colleague Christopher Harris at World Soccer Talk I did not come from the country or have immediate family grow up there. There are branches of my family tree from Wales but the majority of my heritage is from Italy, Scotland, or even England. So why was I pumping my fist and retrying to keep down the noise yesterday while watching Wales 3-1 victory over Belgium?
One major reason is I have had the privilege of watching this team in its infancy, as it tried to qualify for the 2014 World Cup. I lost Kiefer today. He was behind me one second and then he was gone. It was my fault. I was intent on looking for a swimsuit for his sister. I saw a design from a certain popular French brand when I was on holiday and was hoping I could buy it here at a discount. And because of one frivolous piece of cloth not worth as much to me, I lost him.
We had found our way to a department store because his father had promised him a racing car track. Since we were already out, I promised to fulfil that promise.
